Labouyi bannann - Green plantain porridge

Entering the @blackfoodie.co battle with 10 ingredients or less, using the secret ingredient for this week, plantain.

Labouyi Bannann is a green plantain porridge that I grew up having for breakfast and super. You can eat it with bread. I personally like to put peanut butter on my bread when eating sweet porridges. You can also switch it up and eat it with cassava or you can simply enjoy a cup of warm Labouyi Bannann. The original recipe includes milk but I choose to omit it.

Ingredients

  1. 1 plantain 

  2. Cinnamon 

  3. Nutmeg 

  4. Ginger powder 

  5. Star anise

  6. Coconut milk 

  7. 4 cups of water 

  8. Lemon zest 

  9. Almond extract ( substitute for vanilla extract)

  10. Brown sugar 

Recipe 

  1. Wash and peel the skin of the washed plantain and cut into small cubes.

  2. Add 2 cups of water and blend.

  3. Pour the blended plantain into a saucepan with your spices (cinnamon, anise, nutmeg, ginger powder, lemon zest) .

  4. Add 2 cups of water and cook the plantain puree for 20 mins

  5. Strain the cooked plantain puree

  6. Add 1 can of coconut milk and brown sugar to taste let it reduce for 5 minutes

  7. Add the almond extract (essence noyau)

  8. Enjoy it with bread, or casava
